Chicken Pita Pizzas

This last week I created a simple recipe by looking at what food I had in my fridge. This is what I came up with.

5-6 flat (no pocket) pita bread
2 garlic cloves, minced
3 tbsp. olive oil
cubed or shredded cooked chicken
sliced mushrooms
sliced zucchini
Parmesan cheese
mozzarella cheese
basil

Mix olive oil and garlic and spread evenly on pita breads. Place chicken, zucchini, and mushrooms on pita breads, then sprinkle with cheeses and basil. Bake at 350 until browned.

  1. wow. that sounds really yummy. and quite gourmet-ish with the pita bread! where in a store do you find pita bread?

  2. I usually see the pita bread at Walmart under the deli counter. Look at the ham in the display counter and look down. They usually have a shelf low to the ground with those kinds of breads. At Walmart anyway.
    Did you use fresh basil leaves, rolled and sliced like ribbons the way Rachel Ray does it, or did you use the dried seasoning kind?

  3. I used dried basil leaves because they are cheaper. But you can grow your own, that is pretty good. Also, Sally, I buy the pita breads on the bottom shelf of the bread/bun aisle. THey are usually by the tortillas and buns. Make sure you use pocketless pita bread.
